Four DELICIOUS and Easy Hearty Crock-Pot Recipes

My four absolute favorite comfort food slow cooker meals! They are
creamy, delicious and super easy.
Three of these are creamier, chicken slow cooker soup recipes, and one is a
classic CHEESEY mac and cheese. I mean...how can you go wrong?
I enjoy making these crock pot meals as much in the warmer months as I do in
the cooler ones. I call them all "comfort foods" -- but that goes any time of
the year!
I’m sharing some of our favorites and a few changes that I make to the original recipes.
First up – this truly scrumptious slow cooker chicken and dumplings recipe:

I first found this recipe ten years ago (the blog is no longer
operating).
It is SOOOOO good!
I am a chicken and dumplings NUT. This one does not disappoint and you'll be
surprised at how easy it us.
Crock pot chicken and dumplings
4-6 boneless skinless chicken breasts
2 tablespoons butter
2 cans cream of chicken soup
1 can chicken broth
1 onion diced (I used half of one)
1 tablespoon dried parsley
4 grands flaky refrigerator biscuits (add more if you want!)
2 cans cream of chicken soup

- Put the chicken, butter, cream of chicken, chicken broth, parsley and onions in the crock pot and cook on high for four to six hours. Mine only needed about five.
- As the chicken cooks and gets tender, break it up with a spoon or fork.
- Get your biscuits and cut them into nine pieces. I kind of rolled them into balls to ensure they stayed whole but it’s not necessary. Stir into chicken mixture and cook for another 30 minutes to hour. (Watch to see how they are "baking" in the soup. Mine are usually done around 30 minutes.)
If your soup is a bit thick, add chicken broth or chicken soup to your liking.
It is SO delicious!! And so much easier than making your own "dumplings."

Crock Pot Easy Mac and Cheese
Crazy easy slow cooker mac and cheese
1/2 pound elbow macaroni
4 cups finely shredded Cheddar cheese, divided
1 (12 fluid ounce) can evaporated milk
1 1/2 cups milk
1 egg
1 teaspoon salt
1/2 teaspoon ground black pepper
Dash of Worcestershire sauce
4 cups finely shredded Cheddar cheese, divided

- Very important before you do anything – spray the crock pot well with cooking spray. Or you can use these slow cooker bags that are safe for high heat. Clean up is a breeze!
- Mix the egg, fresh milk, evaporated milk, and Worcestershire together in a large bowl. Mix in the uncooked macaroni and three cups of shredded cheese. Pour into the crock pot and sprinkle the remaining cheese on top.
- Cook on low for four to five hours -- check around four because that's when mine is about ready. Do not stir or remove lid while cooking.
The first time I made this I used thicker shredded cheese, but I find finely shredded works better.
I saved the best for last...this creamy chicken and wild rice soup is fantastic! I first found this recipe here.
Crock Pot Creamy Chicken and Wild Rice Soup
This one takes a bit more work, but it’s worth it!
Crock pot creamy chicken and wild rice soup
4 cups chicken broth
2 cups water
2 boneless, skinless chicken breasts
1 package of Rice-a-Roni long grain and wild rice
1/2 tsp salt (plus more to taste)
1/2 tsp pepper
3/4 cup all purpose flour
1/2 cup butter
2 cups half and half
1 cup grated carrots
1 cup diced celery
2 cups water
2 boneless, skinless chicken breasts
1 package of Rice-a-Roni long grain and wild rice
1/2 tsp salt (plus more to taste)
1/2 tsp pepper
3/4 cup all purpose flour
1/2 cup butter
2 cups half and half
1 cup grated carrots
1 cup diced celery
and/or
1 small can mushrooms
- Mix the broth, water, carrots, celery, mushrooms, chicken and rice and the rice seasoning packet in the slow cooker
- Cook on low for six to eight hours or on high for four hours. I did the high version and it turned out great.

Once chicken gets tender (couple hours in), break it up into pieces with a
fork while cooking.
Next, in a medium saucepan over low heat, melt the butter. Stir in the flour
mixture a tablespoon at a time to form a roux.
A roux is a mixture used as thickener for stews, soups and gravy.
Stir this yummy mixture into the soup in the crock pot then let it cook on low for 15 more minutes.
Then die and go to heaven cause it tastes that good.
We like our chicken and wild rice soup thicker, almost like gravy. If you prefer it thinner you can add additional chicken broth. I would wait to see how it cooks up first though.

ReplyDeleteI have been loving my crockpot lately too! (Crockpot Girls on FB has been rather inspiring...) Last night I made Blueberry Cobbler in my crockpot, and today I did a Biscuit-topped Potpie. Yummy! Planning to try a bread pudding next, I think. Or, maybe steel cut oats....
ReplyDeleteIt all looks amazing... but let me say, that Chicken and Dumplings recipe really is amazing. In fact, I've got a can of buscuits in the fridge right now because I'm making them tomorrow! Now that it's cold I'm ready for comfort food again(but I guess I made chili last week when it was 90 degrees too, so maybe I'm just ready for fall!)

ReplyDeleteI *heart* my crockpot! Thanks for teasing me with all this yumminess! The hubby and I are on the south beach diet so half of this stuff is a big fat no. I use my crockpot in the summer a lot. No slaving over a hot stove! We like spicy pork stew, chicken noodle soup, bbq chicken and pot roast. Yum yum yum! :)

ReplyDeleteOf course it is cooking!! Of course, I say I cooked dinner if I order pizza or drive through Subway... so maybe I am not the best one to ask! :) Thank you for sharing your recipes! I need new ones! I only make about 3-4 meals in the crockpot.. but they all are yummy- I need a few new ones! Also, I wanted to let you know they make liners for crockpots to make clean up a breeze... after all... you shouldn't have to cook and clean! :)

I'm a piano teacher two days a week from home and on my "long" day of teaching I deemed it "crockpot Thursday" and am looking forward to all my recipes to come...Yours look yummy but I can't eat eat dairy so I couldn't eat any of them :( Never fear! I LOVE using my crockpot, it makes life easy lol. Those recipes look yummy. I have a chicken and dumplings recipe from my mother but it requires making my own dough, but it would be nice to have quicker biscuit option. Also, I never would have thought to make mac and cheese in a crockpot but I think I will give it a shot.

These ALL sound wonderful! I can't decide which one I want to make first. I use my crock pot a lot. Even in the summer because it doesn't heat up the entire kitchen and it saves a lot on the electric bill. I always use it to cook my chicken if it will be going into a casserole. It comes out much more tender. Thanks for sharing!

My crockpot is such a lifesaver with 3 young kiddos and another one the way next month! Our absolute FAVORITE is Crockpot Chicken. Sounds boring but it is simply A.MA.ZING! 3 large chicken breasts, 1 can Cream of Chicken, 1 package of Cream Cheese, and 1 Zesty Italian Seasoning packet. Put all together and cook on low for 6 hours. Shred chicken. Make some egg noodles about 5 minutes before chicken is ready - then top egg noodles with the chicken mixture. Even my PICKY kids will eat this and ask for more. I promise it's a keeper! :)

ReplyDeleteRoux! I'm from South Louisiana, so I'm pretty familiar with that. A lot of the recipes around here start with, "first, you make a roux." They even had jarred roux at the grocery store now (but I'd rather make my own). Gotta make it just right 'cause a bad roux can destroy a dish. But it sure can make some yummy food.
ReplyDeleteI too looove my crockpot. Sometimes I just stew my meats in it to add to a stove cooked soup later in the evening, or sometimes I do it all in the crockpot. So handy! I imagine your cooking times vary based on the power/heat of the individual crockpot, much like microwave times vary.

ReplyDeleteAnd here's a tip for totally awesome cheater breadbowls: buy frozen bread dough. Let it thaw, then cut one loaf into 4 pieces. Roll them into ball shapes and bake. Super yummy!

I think I'm the only woman in America who doesn't own a crock pot...but as our days get busier, I think I'll have to cave. That is, unless cereal for dinner continues to be acceptable to my kids. :)

They sell disposable liners for crockpots now! They are similar to cooking bags for turkey, etc. On camp outs I cook almost exclusively with my crockpot. The liners are so easy! Place it in the crockpot, cook, then toss. No messy clean up! I swear by them! lol

these sound great - I can't wait to try them. I'll share my tip - Reynolds makes a Crock Pot LINER!!! yes Liner, awesome - no messy clean up. They are about 1.85 at my local Winco near the foil and plastic wraps - made like oven cooking bags but big enough for a crock pot. they have changed my life - at least when it comes to cooking in a crock pot!

we do 15 bean soup in the fall-its really complicated :P

one box vegetable stock (low sodium)
spices to tase-if you like it hot, add habajeros, etc
Sometimes we add carrots/spinach.
Just throw it all in the crock pot, adjusting the liquid so its 3/4 of the way up the pot.
Put the lid on, heat on slow, and when you get home from work/etc voila!
A healthy dinner-just add some crusty french bread and a salad/veggie.
My hubby is the cheese freak here...me, not so much, but I may have to give that Mac and Cheese a try :)

I'm too lazy to read the comments but do you know about Reynold's Slow Cooker liners. They make using the Crock Pot even better than it already is!! All you do is place the liner in and add your ingredients. When you are done..you just throw the liner away...no scrubbing!

ReplyDeleteI don't know if you've found it yet or not, but if you look me up on pinterest, I've repinned a fantastic recipe for "cream of" soup. Its like a powdered mixture that you can keep on hand to use when a recipe calls for "cream of..." I'm so glad I found it on pinterest. You should check it out.

ReplyDeleteI make chicken and dumplings a lot during the fall and winter. My recipe is similar to yours except that use about a teaspoon of poultry seasoning and celery. Both of these ingredients make a huge difference in the savory-ness of the dish. I've never tried it in the crock pot though but now I will.

ReplyDeletei don't know if you could email me ASAP, but i am at the point of adding the biscuits to the chix and biscuits and realized i bought 4 tubes of the grands biscuits thinking the recipe called for 4 tubes - does it call for 4 tubes of biscuits or just 4 biscuits??? i am SO not a cook and thought i'd impress my hubby with this but geesh, i'm not sure what to do at this point :) thanks!!!
ReplyDeleteI had the same problem when I made this crock pot mac n cheese! I should have turned it off like and hour before and it could have been a lot creamier. But the flavor was still good. Next time I'll know! P.S. Next time I will also know to super grease the pot b/c some of the macaroni was welded on!

ReplyDeleteThey all look amazing, I tried today to make the creamy chicken and wild rice soup. It didn't come as amazing as yours did, it doesn't even look as amazing... :( The only thing I did different is used Rice-a-Roni Long Grain and Wild Rice, but used the "natural" version they have out now. I guess the spices aren't the same, and maybe it has less rice because you can barely see the rice now that it's done. I'm going to let it cool and put it in the fridge and bring it out tomorrow to re-season, sometimes things taste better the next day....So word of warning if anyone wants to make it- use the regular Rice-a roni wild rice. I will try it again...
